It is composed of three grape varieties: 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier.

The nose is open and expressive, distinguished by delicate notes of citrus, flowers and white-fleshed fruits. On the palate, this champagne is well balanced between freshness and vinosity. It is fruity with a nice length.

The Estate and the Vineyard

The Ayala house founded in 1860 is located in Aÿ in the heart of the Champagne vineyards. It belongs to the company Ayala and Co subsidiary of the company Champagne Bollinger since 2005.

In 1855, Edmond de Ayala, son of a Colombian diplomat, went to the Viscount of Mareuil to learn how to make wine. There he met Gabrielle d'Albrecht, the viscount’s niece. They married in 1858 and Gabrielle brought the castle of Aÿ and magnificent vineyards as dowry. This is how the House was founded in 1860. The Ayala trademark was deposited at the Registry of the Commercial Court of Reims on November 5, 1875.
