This Côte de Nuits Villages from Domaine d'Ardhuy offers remarkable intensity with powerful aromas of cherry and blackcurrant. Its tannic texture is well balanced, making it a perfect match for a variety of dishes such as sauced dishes, game meats, red meats, and cheeses.
The grapes are harvested by hand, followed by a cold maceration of 3 to 4 days, then a fermentation of 15 to 21 days with regular cap watering. Vinification takes place in oak barrels, giving it a structure that allows for excellent aging, reaching its peak between 5 and 10 years.
After hand harvesting, the wine is aged in oak barrels, with 30% being new, for approximately one year before being bottled. It is not fined and undergoes a light filtration before bottling.
Pairing: Sautéed mushrooms, dishes with sauce, game meats, red meats, cheeses, ribeye steak.

The Estate and the Vineyard
The Domaine d'Ardhuy spans across the Côte de Beaune and the Côte de Nuits in Burgundy. The vineyards are meticulously tended with deep respect for the terroir, and there is a perfect mastery of the various stages involved in crafting wine.
The Clos des Langres has long been renowned for the quality of its production. The vines, approximately 25 years old on average and over 65 years for the oldest ones, yield grapes of excellent quality and taste, thriving in a soil rich in brown limestone and organic matter.
