The Estate and the Vineyard
Domaine Saint Martin des Champs has chosen to dedicate part of its vineyard to a well-reasoned cultivation of the vine. On a terroir of Terre Blanche and Calcaire, exposed to the North, the grapes are harvested at night, when daytime temperatures have fallen. The vatting is conducted over a period of 15/20 days, the musts are therefore worked by winding. The aging occurs by traditional vinification, in concrete tank, without gluing, filtered before bottling Burgundy.
The average yield is about 60 hl/ha.
