The Estate and the Vineyard
Saint-Estèphe is a communal appellation of the northernmost Medoc. Its subsoil punctuated with gravelly rumps, rests on a great variety, ranging from limestone to clay.
Each plot selected for the elaboration of this St Estèphe Reserve Mouton Cadet, is followed by the oenologists of Baron Philippe de Rothschild, advising their winegrowers-partners on the conduct of their vines, in order to determine the most optimal date, to start the harvest.
This process allows to preserve the personality and the diversity of each plot, and of each grape variety, with the main aim of preserving the tannic profile, rich and powerful of the appellation.
The juices are then aged 18 months including 12 months in French oak barrels.
