The Estate and the Vineyard

The Domaine des Salins du Midi is located in Aigues-Mortes, right in the heart of the Camargue Gardoise, in a unique environment blending sea, ponds, dunes, and salt marshes. It is in this exceptional natural setting that salt production (since Antiquity) and vine cultivation (since the Middle Ages) coexist.

    - The site belongs to the Salins Group, one of the oldest salt producers in Europe.

    - The vines are planted on sandy coastal ridges, between land and sea, protected by the sea breeze and saline influence.

    - The modern vineyard has been cultivated since the 1990s with a qualitative, ecological approach that respects biodiversity.

The estate spans approximately 15 hectares of vines planted directly in sand, on soils free of clay and stones, at an altitude practically at sea level (0–2 meters), exposed to humidity, salt, and sea wind. The dominant grape variety is Grenache gris, well adapted to the sandy soils and the dry, sunny climate of the Camargue.

Practicing sustainable agriculture, the harvest is carried out at night to preserve aromas and limit oxidation. The vineyard is located within a Natura 2000 protected area, rich in biodiversity (including flamingos, glasswort, etc.). To respect the terroir, there is no irrigation, moderate use of inputs, and gentle, precise winemaking.

Regarding the harvest, the grapes are picked at night, destemmed, and gently cold-pressed. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the finesse and authenticity of the grape variety. The wines are then made on site, in a small modern cellar built in the heart of the dunes.

Signature Wines

Salinae – Gris de Gris: The estate’s flagship wine, a pale and mineral rosé under the AOP Sable de Camargue designation.

Other recognized cuvées regularly awarded prizes at competitions such as the Concours Général Agricole and featured in the Guide Hachette.

The domaine also offers guided tours combining visits to the salt marshes, the vineyard, and wine tastings. Visitors can explore by small train or bike, enjoying spectacular views over the pink salt basins and local wildlife. It is a unique experience blending heritage, nature, and wine.
