The Maison Carrel serves as a cellar for aging and refining, while the Cuvier Carrel specializes in wines from organic farming. The Domaine d'Ansignan, nestled under the Canigou, the sacred mountain of the Catalans, is a vineyard made up of old vines located in the Pyrénées Orientales.

Jeff Carrel primarily operates in Languedoc-Roussillon, but also in Bordeaux, Beaujolais, and Burgundy. He crafts a collection of unique wines, each with a distinctive label and at affordable prices: wines that are simple but not simplistic, as he likes to emphasize.
