Mercurey Premier Cru Les Combins comes from Pinot Noir vines grown on clay-limestone soils, with light marls, gravel, and beige limestone pebbles on the surface, benefiting from full southern exposure. The harvest is done manually, and the grapes are fully destemmed. Fermentation occurs naturally with indigenous yeasts in open vats. After a 20-day maceration, the wine is aged for 18 months in oak barrels, 25% of which are new.
Pairing: Red meats, poultry, white meats, game, and cheeses.

Taste: Dense and subtle wine with a bright ruby color. On the nose, cherry aromas are prominent, with notes of kirsch and cherry brandy. The palate is structured and fleshy, with flavors of wild berries.

Le domaine et le vignoble
Domaine Michel Juillot is located in Mercurey, in the Côte Chalonnaise region of Burgundy. Founded in 1928, this winery is still owned by the Juillot family. Under the leadership of Laurent Juillot, the fourth generation of family winemakers, the estate spans 31 hectares covering both the Côte Chalonnaise and the Côte de Beaune. Environmental respect is at the heart of their concerns, with a firm commitment to producing high-quality wines. The estate proudly obtained the Haute Valeur Environnementale (HVE) certification in 2019.
At this winery, the harvest is done manually, and the grapes are meticulously selected on a sorting table. Fermentation lasts about 12 months in oak barrels.
