The Aldène cave or Fauzan cave is located in Cesseras in the Cesse gorges at an altitude of 500 m. This exceptional site features 30,000-year-old stalagmites and 8,000-year-old rock carvings. Homage is paid to this extraordinary site by the Aldène, the flagship cuvée of the Château de Fauzan of communal appellation Minervois la Livinière.
Food and wine pairing : Red meats in sauce, lamb mice with spices, game (deer, wild boar, etc.), an assortment of ripened cheeses…

Taste: The olfaction reveals a rich, dense nose with a melting pot of smells such as brown tobacco, black fruit, cherry stone, toasted… But also sweet woody notes and an animal character of good all, without exuberance. In the mouth, it provides a feeling of fullness due to its beautiful balance with ripe tannins, a woody finesse and a «fresh» character. One guesses a fair extraction, an adequate breeding. Although rich, the finish is long and remarkably fresh with a persistence of “grilled” and “spicy” notes (pepper, liquorice)…

The Estate and the Vineyard
The vineyard of Château de Fauzan is located in the Minervois on a clay-limestone plateau at 350 meters altitude.
A passion for trout fishing in the Cesse River led Albert, the grandfather of the Bourrel family, to settle in Fauzan in 1956.
Located in the terroir of La Livinière, near the Gorges de la Cesse, between the emblematic departments of Aude and Hérault, the Château de Fauzan creates with passion and authenticity exceptional wines. Over the years, the Bourrel Family has worked to develop the potential of this exceptional land, a legacy of the time when poetry was bottled.
