The Domaine Tariquet has chosen to create a sparkle in the heart of its vineyard in Côtes de Gascogne, but the IGP does not have sparkling wine in its specifications, Entracte is claimed Vin de France.
This sparkling dry white wine is the fruit of a blend of Chenin and Chardonnay, with fine, delicate bubbles, fermented a second time in a closed vat, without adding CO2, and will be subsequently raised 6 months on lees.
In order to preserve the fruit and its aromatic freshness, the Grassa family chose to butcher Entracte with a capsule.
