This Nuits-Saint-Georges is intense and powerful on these aromas. They mix cherry, blackcurrant, fur, truffle and spices. It is a tannic wine that harmonizes very well on its whole.
Its harvest is manual then the harvest is put in vat for a cold maceration of 3 to 4 days. Its vatting lasts from 15 to 21 days, when the «hat» is regularly watered. It is then vinified in oak cask, and 30% in new barrels between 15 and 18 months.
It will perfectly accompany dishes in sauce, game, red meats and cheeses.
Its structure allows it to have a long guard. It will be sensational between 5 and 10 years.

The Estate and the Vineyard
Jérôme Chezeaux estate is located in the town of Premeaux-Prissey, very close to Nuits-St-Georges. This estate has existed since 1930 and was taken over in 1971 by the Chezeaux family. Since then, this estate has been a family affair, where Jérôme Chezeaux took it over in 1993 after his father, Bernard Chezeaux. He does traditional work there.
The vineyard consists of a great diversity allowing it to present 14 different appellations.
