The name "Estibals" was simply chosen after the name of its production plot within the Domaine de l'Ostal, known as "Les Estibals".
Located at the foot of the Montagne Noire, right in the heart of the village of La Livinière, Jean Michel CAZES aimed to produce a Minervois worthy of its name by restructuring the estate amidst preserved nature, surrounded by beautiful evergreen oaks and cypresses. This environment yields a dark red wine with violet reflections, offering aromas of Morello cherries, red fruits, and the scents of the Mediterranean scrubland.
Before serving, it's recommended to open the bottle half an hour in advance to allow Estibals to fully express itself.
This red wine can be enjoyed now or can be kept for 4 to 5 years.

The Estate and the Vineyard
Nestled between the historic port of Narbonne and the medieval city of Carcassonne, at the foot of the majestic Montagne Noire, lies the Domaine de l'Ostal, stretching across 60 hectares of vineyard terrain. It offers an extensive selection of wines from the renowned appellations of Pays d'Oc and Minervois. The name "Ostal," borrowed from the ancient Occitan dialect, conveys the concept of home and community, embodying the foundational principles of this family-owned estate. In 2002, inspired by Monsieur Jean-Michel Cazes, two neighboring estates were acquired to establish an exceptional winemaking venture, giving rise to the Domaine de l'Ostal.
